Keep calorie intake equal to or less than your calorie expenditures, and the weight issue will sort itself out quite easily. There's no magic to it, just a bit of discipline. Proteins and carbs, OTOH, require conversion and are less likely to be stored as fat. In general, though, low-fat foods have probably caused more weight gain than all other factors combined!
